My turmeric chicken with ginger and shallot oil and peach salad tastes as good as it looks and is so easy to make! I pretty much always butterfly a chicken to roast it so it cooks much quicker, and the combo of the resting juices with the ginger is magic. I’ve used the Scanpan 32cm chefs pan here as it means I can start and finish the whole dish as a one-pan-wonder.
