I have 3 kids and only one would be able to do the adult course, which I would have to complete with him. Is there somewhere my 2 youngest can safely wait while I do the adult course with my oldest since my 2 youngest wouldn’t be able to participate in it?

Well, there is a small sitting area, but nothing really to do at it. They would need something to keep them busy, and the employees are not to be considered responsible for them.
Are you open the week between Christmas and New Years?

On their website they only have spots left on December 30th. I wouldn’t recommend going without a reservation, and you can schedule that and see their availability on their website.
