I have 3 kids and only one would be able to do the adult course, which I would have to complete with him. Is there somewhere my 2 youngest can safely wait while I do the adult course with my oldest since my 2 youngest wouldn’t be able to participate in it?

I think they do require an adult to be there with the young ones though. On re-reading your question I saw that you were the only adult.
Are you open the week between Christmas and New Years?

On their website they only have spots left on December 30th. I wouldn’t recommend going without a reservation, and you can schedule that and see their availability on their website.
